Executive Chef

Spend your summer working in the best kitchen in the north east! Seeking a dedicated, hard working, self sufficient, compassionate and intuitive Executive Chef to service a 16 passenger overnight cruising yacht on Lake Champlain out of Burlington, Vermont. The Moonlight Lady is a 71’ overnight cruising yacht, complete with Sky (top) deck open Culinary Theater and Admiral (bottom) deck prep kitchen. Dining is one of the main highlights of the cruising experience aboard Moonlight Lady. All food is prepared fresh and in the presence of the guests.
Applicants must have knowledge of the Vermont / Adirondack “food scene”. Must have fine dining experience. Must be a “people person” who is able to simultaneously cook and entertain. Boating, lake, and water sports experience a plus. Ability to speak in French/ Canadian a plus.
Requirements:
Ability to live and work on an overnight cruising yacht from May-October.
Accountable for all food related duties and assist when needed in daily yacht operations, and guest relations.
Provision within budget for 1-7 nights, offshore voyages for 16 guests and 6 crew.
Maximize product utilization
Create, provision, prepare and execute meals underway and while in port or at anchor including breakfast, lunch, dinner, and afternoon snacks daily. Including private events for up to 48 guests.
Ability to lift 50-60lbs unassisted.
Must be able to work unassisted, and prepare meals on schedule.
Attention to detail, presentation, and food quality.
Strong knowledge of local (Vermont and NY) food products.
Desire to please and exceed expectations.
Ability to be intuitive and react to guest requests, needs and expectations inherently.
Consistent cleanliness is imperative, as the kitchen is open and adjacent to the dining space.
Impeccable sanitation standards
Serve Safe Certified
Ability to prepare, and instruct small culinary workshops on board the yacht.
Strong creative skills.
Two favorable letters of reference.
Clean and current Passport. International travel required.
